This recipe from the Cheats & Eats Lifestyle Programme is quick and easy to make and tastes delicious!

Serves: 2

Ingredients:

  • 1 tbsp olive or coconut oil
  • Sea salt
  • 450g skinless salmon fillet, sliced into 4 equal pieces
  • 60ml plus 1 tsp water
  • 4 spring onions, thinly sliced
  • 2 garlic cloves, chopped
  • 1 tbsp ginger, chopped
  • 450g spinach
  • 450g baby bok choy, halved lengthwise
  • Juice of 1 lime
  • 1 tsp coriander (optional)
  • Chilli flakes to taste (optional)

Method:

Heat half a tablespoon of the oil in a large frying pan over medium-high heat. Season the salmon with sea salt and then cook in the frying pan, for approximately 4-5 minutes per side.

In a separate frying pan over medium-high heat, add the remaining oil and one teaspoon of water.  Add the spring onions, garlic and ginger and stir continuously for 30 seconds.

Add the spinach, bok choy and 60ml of water.  Stir continuously for 4-6 minutes, or until the vegetables are just cooked and still bright green.
Place the salmon and vegetables on a plate and squeeze the lime juice over the top.  Garnish with coriander and chilli flakes, if desired.
