A quick and easy salad with ingredients for a healthy gut

Serves 2

300 calories per serving

Rich in Vitamin E, Iron and Fibre

Ingredients:

1 red onion, finely sliced
1 lemon, juiced
1 cucumber, deseeded, peeled, halved and sliced
400g tin chickpeas, drained and rinsed
1 handful mint, finely chopped
1 handful of coriander roughly chopped
1 handful baby spinach leaves
2 tbsp plain live yoghurt
1 tsp nigella seeds
Sea salt
Black pepper

 

Chickpea Salad

Method:

  1. Put the red onion slices in a small bowl and add a pinch of salt and lemon juice. Leave to soak for 5 minutes until the onions have turned bright pink.
  2. Mix together the cucumber, chickpeas, mint, spinach and yogurt in a large bowl. Season to taste.  Top with the onion slices and then the nigella seeds.
