How to make a satisfying and delicious porridge packed with essential vitamins and minerals

You may remember I recently reviewed the Nourish range of drinks from Nutritionist, Jane Clarke. If you missed the article you can read it HERE. I gave a selection of Nourish drinks to my parents to aid my father’s recovery after leaving hospital. My mother started getting inventive and used the drinks to make their breakfast, knowing that they would get a certain amount of calories to help sustain them throughout the day. Especially when my father’s appetite was low.

Jane Clarke has shared her recipe for the Nourish Drink Porridge which is a great way to add some extra calories, vitamins and minerals to your day. You can choose which Nourish Drink you would like to add depending on what flavour you feel, like or prefer. When it comes to toppings, we recommend some fresh or stewed fruit, honey or jam.

Serves 2

Prep time: About 5 minutes

Cooking time: About 5 minutes

Ingredients:

100g Porridge Oats
200ml Full Fat Milk
175ml Nourish Drink (Vanilla, Chocolate, Raspberry or Mango)

Method:

Warm the milk in a small heavy bottom pan, stirring constantly

When it is close to boiling, add the porridge oats and turn down the heat

Wait until all the milk is absorbed, stirring every 1-2 minutes

Now add your choice of the Nourish drink and keep stirring on a low heat until the drink is absorbed, and the porridge has a smooth consistency

Serve the porridge with your preferred topping or just on its own
